This year I decided to plan a kid-friendly intimate vegan Easter brunch for our immediate family. I only wished my whole family could’ve been here this year. My poor hubby was basically held up due to his faulty dispatch (hubby drives a rig) and wasn’t able to spend Easter with us. Although my other half wasn’t able to make it, we still made the most of it!
The Tablescape & Decor
As you may know, I absolutely love the color pink so I covered the table with a pink tablecloth and added some fresh flowers and candles. I used the vegan Easter eggs, my little ones dyed as part of the centerpiece in the middle of the table. The vibrant eggs gave the perfect touch to this Easter tablescape. I set the table with pure white plates to add contrast to the overall look.
Main course & Dessert
I decided to keep our meal simple this year. Simplicity is best when cooking for small children or picky palates. I made homemade alkaline electric vegan spelt/rye bread. I used the bread to make avocado mayo, lettuce, and tomato sandwiches. This was paired with some homemade kale chips and seeded grapes. For dessert, we had homemade vegan cupcakes (a recipe post is in the making). These cupcakes did not last long. They were just too delicious! I think I had about 3 of them myself! I always serve water with just about every meal except for breakfast, but I decided to treat the kids with some delicious limeade. My little ones loved this meal! Their plates were empty with nothing but a few crumbs left over once they finished.
This year’s Easter was full of so many sweet memories that I will cherish forever. I hope that your Easter holiday was just a precious and memorable as mine.
