With school finally back in session, I would like to share with you 5 vegan lunch ideas that your little’s would love. Although the lunches I am sharing are in a homeschool setting they are perfect for packed lunches. Our littles loved every single one of these lunch ideas and gobbled them up leaving no crumbs behind!
Lemon-Tahini Dressing
- 1 lemon juiced
- 1/2 cup tahini
- 2 garlic cloves
- 1/2 tsp sea salt
- 1/2 cup of water or more
Zucchini Falafel
- 2 medium zucchini
- 1 bunch parsley
- 4 cups cooked or 2 cans of chickpeas
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp sea salt (add more to taste)

Avocado Pesto Sauce
- 1/4 cup tightly packed fresh parsley
- 1/4 cup loosely packed fresh basil
- 3 tbsp packed fresh chives
- 3 tbsp lemon juice
- 1/2 ripe avocado
- 1/3 cup water
- 3 garlic cloves
- 1 tsp coconut aminos or 1/2 tsp tamari
- 1/2 tsp sea salt pinch of cayenne
- 1 tbsp olive oil (optional)
