Recently I came up with my very own apple spice vegan muffin recipe when I decided to create a spin-off of my favorite alkaline electric blueberry vegan muffin recipe. I really miss having a delicious apple strudel muffin in the morning since transitioning to an alkaline vegan lifestyle. This is when in the idea hit me to attempt to incorporate that apple cinnamon flavor into our breakfast muffins. These muffins turned out to be delicious and were really fun and easy to make. Sonata really enjoyed helping to prepare them in the kitchen and I’m sure your little ones will too! Once they were done, my little ones gobbled them up so fast letting me know that my kitchen experiment was a complete success! 😀

Well enough of my ramblings. Let’s get to the recipe at hand.
Makes about 9 muffins
- 1 c hemp milk, coconut milk, walnut milk or quinoa milk
- 3/4 c teff flour
- 3/4 c kamut flour
- 2 apples (peeled & chopped)
- 1/3 c agave nectar
- 1/4 c sea moss gel
- 1/2 tsp sea salt
- 1 tsp ground cloves
- 1 tsp allspice
Step 1: Preheat oven to 400°F.
Step 2: Mix all dry ingredients in a bowl.
Step 3: Mix agave nectar, milk, and sea moss gel into the flour mixture.
Step 4: Fold apples into the mixture.
Step 5: Spoon batter into greased muffin tin and bake for 25-30 minutes or until a toothpick inserted in the center of a muffin comes out clean.
Final Step: Allow muffins to cool and remove from pan. Enjoy your Apple Spice Vegan muffins!
Note: The muffins will be a bit dense since there is no leavening added to the recipe. This is a common characteristic of all alkaline vegan baked goods.
